General brewing instructions: 3g of leaves to 7oz (200ml) of water at 195F for 2 minutes. Can be re-brewed up to 5 times with hotter water and longer infusions when brewed Gong Fu style.

Another of our “rock teas” grown in the rocky soils of the Wuyi Mountains in Fujian, China. Rou Gui is known for its long-lasting sweet cinnamon notes and light floral aftertaste. The primary taste is fruity, flowery, and woody. Unlike many other teas in China, Rou Gui is not cultivated in the plantation style, but grows in spacious groves, some more than 100 years old, in a government-protected area so no chemicals or pesticides are used, although not certified organic. Add 2.5 tsp (3g) to 7oz (200ml) of water. Brew at 195F for 2 minutes.  Gong Fu brewing recommended.

About Our Tea Offerings

Tea measurements and water amount and temperatures vary, based on your personal preferences. We advise rinsing tea for a few seconds before the first infusion, at the same temperature as the brewed water. This softens the leaves for brewing. Filtered water, if possible. Use our brewing instructions only as guidelines. Your preferences are the most important.

Most of our teas are organic, but some are not Certified Organic. Our tea descriptions will let you know which of them carry the USDA Certified Organic label. Importantly, know that we support and work directly with conscientious, small independent farmers.
